Castillo Coffee Variety is known for its smoothness, aroma, and citric acidity. This Coffee variety was released by Colombia’s National Center for Coffee Investigation (CENICAFE) in 2005. It is marked by high yield and resistance to Coffee Leaf Rust (CLR) as well as coffee berry disease. Its dwarf size means it can be planted close together for higher per-hectare yields. -48 hours of oxidation in cherry.
-Coffee is heated to 40°C before pulping. Fermentation in a bioreactor with yeast and fresh fruit (pineapple, peach, and
peach oil) for 2 days.
-Drying Method: Solar drying until 40% moisture reduction, followed by mechani- cal drying in a silo.
Storage: 1 month for grain stabilization.
